Caribbean Rice


Preparation Time: 20 minutes
Cookery Time: 20 minutes
Makes: 12 servings
4 cups boiled rice (wild, brown or basmati)
½ cup fresh pineapple pieces
100gm pitted prunes, chopped
½ cup clean cashew nuts
½ cup spring onions with greens, finely chopped
1 cup diced red bell peppers
1tsp curry powder
½ cup green olives, sliced
200ml basic French dressing (easily available at any large department store)
1. Put the initial six ingredients in a bowl. You can make use of a mix up of dissimilar rice so long as everyone is cooked independently.
2. Beat the dressing with the curry powder. Pour over the ingredients in the bowl. Toss and serve in pineapple shell at high temperature.
Each serving: 1163.5 calories, 7.7gm protein, 70.8gm carbohydrate, 95.0gm total fat (1.0 saturated), 3.9gm fibre, 0mg cholesterol, 919.8mg sodium.
